Ingredients
- 250 g pasta (e.g., penne or fusilli)
- 1 zucchini
- 300 g chicken or turkey breast, diced
- 2 garlic cloves
- 1 small onion
- 200 ml tomato sauce
- 100 ml cream
- 1 tsp salt
- ½ tsp pepper
- 1 tsp sweet paprika
- ½ tsp sugar
- Fresh parsley or oregano
- 50 g freshly grated Parmesan
- Optional: olive oil for frying
Instructions
- Cook pasta
- Boil water, add salt, cook pasta al dente according to package instructions. Drain and set aside.
- Prep vegetables
- Dice zucchini, finely chop garlic, and dice onion.
- Cook chicken
- Heat olive oil in a pan.
- Fry chicken cubes with salt, pepper, and paprika until lightly browned.
- Add vegetables
- Sauté onion and garlic for 1–2 minutes.
- Add zucchini and cook 3–4 minutes until slightly soft.
- Make the sauce
- Stir in tomato sauce, cream, and sugar.
- Bring to a brief boil and season with salt, pepper, and paprika.
- Combine pasta
- Add the cooked pasta to the pan.
- Mix well and let it sit 1–2 minutes to absorb the sauce.
- Serve
- Sprinkle with fresh parsley or oregano.
- Top with freshly grated Parmesan.
