This Alpine Timballo Deluxe from my Dad Food Series combines crispy puff pastry with creamy spinach, melted cheese and Swiss bacon.
Layered in a buttered baking dish and baked until golden and crunchy, it delivers ultimate comfort food vibes.

πŸ›’ Ingredients (Serves 4)

  • 2 sheets puff pastry
  • 300–400 g fresh spinach (or thawed & well drained)
  • 150–200 g grated cheese (GruyΓ¨re, Emmental or mix)
  • 150 g Swiss bacon, sliced or diced
  • 2–3 tbsp butter (for greasing & topping)
  • Salt & pepper to taste
  • Optional: pinch of nutmeg

πŸ‘¨β€πŸ³ Instructions

  1. Preheat oven to 180Β°C (350Β°F) top/bottom heat.
  2. Generously butter a baking dish.
  3. Place the first sheet of puff pastry into the dish, covering bottom and sides.
  4. Spread the spinach evenly on top and season lightly.
  5. Add a generous layer of grated cheese.
  6. Distribute the Swiss bacon over the cheese.
  7. Cover with the second sheet of puff pastry and seal the edges well.
  8. Brush the top with melted butter.
  9. Bake for about 30–35 minutes until golden brown.
