This Alpine Timballo Deluxe from my Dad Food Series combines crispy puff pastry with creamy spinach, melted cheese and Swiss bacon.
Layered in a buttered baking dish and baked until golden and crunchy, it delivers ultimate comfort food vibes.

π Ingredients (Serves 4)
- 2 sheets puff pastry
- 300β400 g fresh spinach (or thawed & well drained)
- 150β200 g grated cheese (GruyΓ¨re, Emmental or mix)
- 150 g Swiss bacon, sliced or diced
- 2β3 tbsp butter (for greasing & topping)
- Salt & pepper to taste
- Optional: pinch of nutmeg
π¨βπ³ Instructions
- Preheat oven to 180Β°C (350Β°F) top/bottom heat.
- Generously butter a baking dish.
- Place the first sheet of puff pastry into the dish, covering bottom and sides.
- Spread the spinach evenly on top and season lightly.
- Add a generous layer of grated cheese.
- Distribute the Swiss bacon over the cheese.
- Cover with the second sheet of puff pastry and seal the edges well.
- Brush the top with melted butter.
- Bake for about 30β35 minutes until golden brown.
